Introduction

Made this recipe up as a way to use up veggies from my CSA share. Made this recipe up as a way to use up veggies from my CSA share.
Number of Servings: 8

Ingredients

    2 cups asparagus (chopped in 1" pieces)
    3 oz spinach, torn into small pieces
    1/2 cup chopped scalllions
    1/2 cup reduced fat cheddar cheese
    5 large eggs
    1/2 cup 2% milk
    1/4 tsp pepper
    1/2 tsp kosher salt
    1 Pillsbury pie crust

Directions

Preheat oven to 425. Bake pie crust for 5 minutes. Steam asparagus for 5 minutes or until tender. Add small amount of water to a pot and add spinach; wilt. In medium bowl, whisk eggs and milk. Add remaining ingredients to bowl then pour in prepared pie crust. Lower oven temperature to 325 degrees and bake for 30 minutes or until set.

Serving Size: Makes 8 servings
