Introduction

I am diabetic and always altering recipes to fit my diet. These are palatable and so useful -- as toast, pita pockets, etc. I am diabetic and always altering recipes to fit my diet. These are palatable and so useful -- as toast, pita pockets, etc.
Number of Servings: 12

Ingredients

    water, yeast, molasses, salt, white whole wheat flour, wheat flour, soy flour, gluten, bread dough improver (optional)

Directions

Mix water, yeast, molasses in bowl and let sit 10 minutes. In mixer or by hand, gradually mix in remaining ingredients until a soft but manageable bread dough results. (You might need a bit more flour, but not much.); use cooking spray on bowl and put dough in then spray top lightly. Allow to rise in a warm place for 1 hour. Shape 6 or 12 pitas and allow to rise another 30-45 minutes. Heat sheet pan in the oven to 450 degrees; drop pitas onto heated pan and cook 6 minutes or until browning a bit. Remove from oven and cover with a moist towel to keep them from hardening. Split in half for use as pita pockets.

Serving Size: 1/2 8-inch pita or 1 4-inch pita
