Number of Servings: 3


    1 14.5 oz can Vegetable broth
    1 pound carrots, peeled and chunked
    1 large potato, peeled and chunked
    1 medium onion, peeled and chunked
    1 bay leaf
    1 cup rice milk
    1 Tbs dill weed (dried)


Heat broth and vegetables with bay leaf to boiling in a large saucepan. Lower heat to maintain a simmer and cook until vegetables are very soft, approximately 40 minutes.

Puree soup using a blender, immersion blender or food mill. Add milk and reheat to serving temperature. Sprinkle dill weed on each portion.
