Number of Servings: 22


    2 eggs
    1 c milk
    1/2 c vegetable oil
    3 c flour
    2/3 c sugar or xylitol sweetener
    4 tsp baking powder
    1 tsp salt
    mix in 3 c blueberries (or another favorite fruit)

    1/2 c brown sugar
    2 tsp cinnamon
    2 Tbsp flour or bisquick
    2 Tbsp melted butter
    1/2 chopped nuts (optional)


Add eggs, milk and oil into a bowl. Mix well.
Add flour, sugar (or xylitol), baking powder and salt. Stir well.
Add blueberries and mix thoroughly.
Put in cupcake pan either greased or lined with cupcake papers.
Top with sugar topping.
Bake at 375*F 20 - 25 minutes.

Serving Size: makes about 24 muffins
