Ingredients

    1 c. broccoli florets
    1 c. chopped bell pepper
    3/4 c. sliced mushrooms
    1/4 c. sliced green onions
    1/2 c. chopped tomato
    1 Tbsp. olive oil
    8 egg whites (or equivalent amount of egg substitute)
    1/4 c. water
    1/2 tsp. oregano
    1/4 tsp. salt
    1/4 tsp. black pepper
    1/4 tsp. garlic powder
    1 c. shredded low-fat cheese

Directions

Preheat oven to 350 degrees F. Grease shallow 1 1/2 quart backing dish.

Heat oil in large skillet. Saute broccoli, bell pepper, mushrooms, and green onions until tender. Remove from heat; set aside.

In medium bowl, beat together egg whites, water, oregano, salt, pepper and garlic powder. Stir in broccoli mixture, cheese, and tomato.

Pour mixture into greased dish. Bake at 350 degrees F about 25 minutes or until a knife inserted in the center comes out clean.

Serving Size: Makes four servings.
