Ingredients

    3 c. chopped zucchini
    4 med. eggs
    1 c. Bisquick
    1/2 c. oil
    1/2 c. parmesan, grated
    1 TB. parsley
    Salt
    Pepper

Directions

Preheat oven to 425 degrees.

Grate or chop zucchini, beat in eggs and seasonings, mix in Bisquick and parmesan cheese. Bake 15 min. at 425, then reduce heat to 350 and continue baking 30 minutes or until knife stuck in center comes out clean.

Makes 4 - 6 servings.

  • I did not make this recipe as I am watching my colesterol intake. Calorie content is high. But other than that I would have loved to make it. It sounds incredible. - 1/3/08
