Number of Servings: 6


    2 Lbs Red Potatoes
    2 Cups Flour
    1 Large Egg
    1/2 Tsp. Salt


Bake the potatoes until fork tender. Let them cool, and peel the skins by hand. Grate the potatoes into a bowl using a box grater. Beat the egg in a separate bowl and add to the potatoes along with the salt. Then add in 1/4 cup of the flour. Stir to combine. Slowly add in more flour, 1/4 cup at a time. When the dough starts to come together, turn it out on to a floured surface. Continue adding flour and knead for 5-10 minutes. if the dough sticks to the surface add more flour, a little at a time. Next cut the dough in to 8 equal pieces. Roll each piece into a snake about 6-7 inches long, Cut the log into little 1 inch cubes. Boil the Gnocchi for 4 minutes, or until they rise to the top.
