    20 spears fresh asparagus
    6 large mushrooms sliced
    1 med onion diced
    2 TBS salted butter
    4 oz diced ham
    5 oz grated cheddar
    1 cup skim milk
    1 large tomato thinly sliced
    3 oz light feta cheese crumbled


Cut asparagus into 1 inch pieces. Place in 9 x 12 baking pan. Add mushrooms and onions, then top with melted butter and stir well. Roast under broiler until most of moisture is evaporated. Add diced ham on top of vegetables. Sprinkle with grated cheddar. Mix eggs and milk and pour on top of veggies. Bake at 350 degrees for about 50 minutes.
Last 10 minutes top with sliced tomatoes and crumbled light feta cheese.
