This is a family recipe that has been changed to a low carb version. This is a family recipe that has been changed to a low carb version.

    32 oz. Cream Cheese
    16 oz. Sour Cream
    4 Large Eggs
    1 1/2 C Stevia Sweetener for baking
    1/4 C All Purpose Flour
    3/4 C Heavy Whipping Cream
    1 Tbsp. Vanilla Extract


Spray 10" Spring Pan with cooking spray and Preheat oven to 375.
Cream together Cream Cheese and Stevia. Lightly wisk eggs before adding them. Add all other ingredients one at a time until completely mixed together, scraping the sides of the bowl as you mix.
Bake at 375 for 60 minutes in a water bath.
When the cake is completely cooked i.e. not real jiggly in the center and the top is barely browned turn the heat off and leave oven door open for 5 minutes.
Once the temperature inside the oven is brought down a bit close the oven door and leave the cake inside for at least one hour, longer if possible. I usually leave mine until I can hold the spring pan with my bare hands.
Cool in the refrigerator overnight-24hrs.

VOILA! You have made a real cheesecake! Now Enjoy...

I add 1/2 tsp of Smuckers Low Sugar Strawberry preserves spread on the top of one slice when I have a little room to splurge.
