    1 - 1.5 oz. box of Jello Fat Free Sugar Free Vanilla Pudding
    2 1/4 cups skim milk
    1 - 8 oz. pkg. Neufchatel Cheese (or light cream cheese)
    1 1/2 cups Cool Whip Lite
    2 cups fresh blueberries
    1 1/2 cups fresh raspberries
    24 Vanilla Wafers, coarsely chopped (optional) and not in the nutrition count for this recipe


Wash and drain berries. If using strawberries, cut them up. Beat cream cheese until creamy. Add pudding mix and milk and beat until smooth, scraping sides of bowl to make sure all cream cheese is scraped from bottom of bowl. Whisk in the cool whip.

If using wafers, put a layer of them on the bottom of 4-6 (depending on the size) parfait glasses, then berries, then pudding mixture. Repeat, ending with fruit on top... and then top with cool whip if desired. My layers were "fruit, pudding, fruit, pudding, fruit, cool whip". Refrigerate until ready to serve.

* I used 4 tall glasses instead of parfait glasses for my desserts. They were very filling. This recipe could easily make 6 (or possibly more) servings if you use small glasses. The nutrition count is for the 4 servings, without the extra cool whip for the topping.
