    2/3rds of a bag of spinach
    1 lb chicken breast
    1 15 oz. can of chickpeas
    1 5.3 oz. container of plain Greek yogurt
    1 medium length scallion, chopped
    1/2 tsp. of dried dill
    1/2 of a cucumber


Season the chicken to taste. (I used cumin, pepper, oregano). Bake the chicken in the oven on 350 until cooked through.

Meanwhile, prepare the salad. Combine yogurt, dill, and chopped scallion in a small bowl. Set aside.

Chop cucumber. Combine with spinach and chickpeas.

Once chicken is done, cut chicken up into bite-size pieces. Add chicken to salad mixture. Cover salad mixture with yogurt dressing, and toss to coat entire salad evenly.

Serves 4.
