Ingredients

    Peel and Chop one eggplant
    Cut three plum tomatoes
    One Cup of Fresh Broccoli
    One Cup of Green Peppers
    1/2 Cup of Onions
    1Tbs of olive oil
    Mrs. Dash Seasoning
    Morton's Lite Salt

Directions

Heat oil in wok or non stick frying pan
Sautee vegetables until tender with Mrs Dash seasoning and Mortons Lite Salt.

Serve with Chicken

    Very Good
    This recipe is great. But I think the servings are more than 1. I also added garlic powder for taste. - 11/15/09
