Introduction

My husband likes tomato soup, so I decided to make up some vegetable soup with more of a tomato base than usual. I made this up in a huge pot and froze most of it in 3-cup containers. Ingredients

    Kale ( 2 cups)
    Head of Cabbage
    Celery (4 stalks)
    Carrots (4)
    Frozen Mixed Vegetables (2-10 oz bags)
    Crushed Tomato (2-28 oz cans)
    Tomato Puree (2-28 oz cans)
    Ground Pork Sausage (2-1 lb tubes)
    Onion Soup Mix
    Water (amount depending on how "soupy" you want it)
    Season to taste

Directions

Chop cabbage, celery, and carrots to bite size pieces. Add all the fresh, frozen, and canned vegetables, along with seasonings to pot. Add water to taste (depending on how thin or think you like your soup). Brown sausage and add to the soup. I cook the soup on high until it boils and then I just let it simmer all day (or at least until the fresh vegetables soften up in the soup). Season to taste.

Serving Size: About 46 1-cup servings, depending on how much water you use.
