    Beans, black, 6 cup
    Salsa, 2 cup
    Cream Cheese, 8 oz
    *Whole Wheat Tortilla, 8 serving
    Cheddar Cheese, 3 cup, shredded


I cook 3 cups of black beans in around 12 cups of water. Bring to a boil, turn heat down and cook for about 3 hours. Drain but reserved some juice. I am sure you could use canned.
Mix black beans (with some of the liquid from cooking, not soup like. If needed you can always add some) salsa and simmer for about 15 minutes. Add the sour cream and stir and mix until the cream cheese has melted and is mixed in well. Grease your baking pan (or pans) and begin to make layers. First layer is the tortillas, then the bean mixture, then cheese. And then you start again with the tortillas. Bake this at 350 ⁰ for about 30 to 35 minutes until it is nice and hot.
Serve with extra salsa, sour cream and avocado, if desired

Serving Size: This recipe makes a large 11X15 casserole. If this is too much for you, make 2 in a 9x9 casserole dishes.
