    3-4 very ripe bananas
    2 cups whole wheat flour
    1/2 cup sugar
    1 tsp. baking soda
    1 cup unsweetened applesauce (mix cinnamon in with it - about 1 tsp.)
    1 tsp. vanilla
    2 egg whites - beaten


1. Preheat oven to 350 degrees. Spray loaf pan with olive oil cooking spray
2. Mash bananas with a fork and set aside
3. Combine flour, sugar, baking soda in a medium bowl
4. Add cinnamon applesauce, eggs, vanilla and bananas to flour mixture
and mix until well combined.
5. Pour batter into prepared loaf pan and bake on center oven rack for
50-60 minutes (until inserted toothpick comes out clean)
6. Let cool in pan for 5 minutes and then cool bread on a cooling
