    2 boneless skinless chicken breasts (4 oz each)
    1/4 plus 1/8 tsp salt
    1/4 tsp coarse ground black pepper
    1/4 c mayonnaise
    1/4 cup red wine vinegar
    1 T dried tarragon or 2T fresh
    1 T Light Brown Sugar
    1/2 # fresh green beans
    1 can black beans, drained and rinsed
    1 medium granny smith apple - cored and thinly sliced
    3 cups mixed salad greens


Season chicken with 1/8 tsp salt and 1/4 tsp pepper.
Grill chicken then refrigerate until ready to use.
Whisk mayonnaise, vinegar, tarragon, brown sugar and 1/4 tsp salt. Cover and refrigerate.
Cook green beans until crisp-tender, drain and plunge into bowl of ice water. Let stand 5 minutes. Drain beans and pat dry.

Mix grean beans, black beans, and apple in large salad bowl.

Slice chicken crosswise into strips. Combine chicken, dressing, beans and apple. Toss gently and serve over mixed greens. Garnish with additional black pepper if desired.

Serving Size: makes 6 servings (1 cup salad and 1/2 c greens)
