Number of Servings: 4


    Pork Chops, 1 lb.
    Garlic cloves, 2 cloves, minced
    Oregano, 1 tsp.
    Olive Oil, 2 tsp.
    Red wine vinegar, 1 tbls.
    Greek yogurt, non-fat, plain, 3/4 cup
    Dill, 1 tbls fresh or 1 tsp dry
    Cucumber, diced, 1 cup
    Tomato, diced, 2 cups
    Red Onion, diced, .5 cup
    Salt, divided, 1 tsp.


Mix garlic, 1 tsp, olive oil, oregano and red wine vinegar together in a zip lock bag - mix them together, then add the pork chops. Marinate at room temperature for 20 minutes, turning once. Then grill or broil (we use our Joe Forman grill)
In the meantime, mix together the yogurt, dill, remaining tsp. of olive oil and 1/8 tsp. salt. Refrigerate.
Combine cucumber, tomato and onion and remaining 1/8 tsp. salt.
Serve the pork shops with the yogurt sauce, and the vegetables on the side.
