Ingredients

3 cloves garlic, smashed
1 piece fresh ginger about the sixe of large thumb, peeled and roughly chopped
1 onion, roughly chopped
1 green pepper, seeded and roughly chopped
1 banana pepper, seeded and roughly chopped
1 jalapeno, seeds removed and roughly chopped
1 t olive oil
2 t turmeric
1 t cumin
1/2 T sea salt
1/2 t freshly ground black pepper
1 C rinsed and drained brown (I used greed) lentils
juice of 1 lemon
1/2 yoghurt cheese to garnish (optional)
1/4 C chopped cilantro (optional)
Directions
In a food processor, pulse garlic, ginger, onion, peppers and jalapeno until finely chopped.
Heat olive oil in a medium pot over medium-high heat. Add processed vegetables, turmeric, cumin, salt and pepper. Cook until vegetables are soft, but not browned, about 3 minutes. Stir in lentils and 3 1/2 cups water. Bring to a boil, cover, reduce heat to low and simmer, stirring occasionally, one hour and 15 minutes. Uncover and remove from heat.
Using potato masher, mash lentils until ostly smooth. Stir in lemon juice and serve. Top each servin with 2 T yoghurt cheese (if desired) and 1 T cilantro, if desired.
