Number of Servings: 6


    1 T. olive oil
    3 cloves garlic
    2 T. chopped basil (optional)
    1 bag of soy crumbles, usually Morningstar Farms or Boca.
    1 can of diced, Italian seasoned tomatoes
    1 can of no-salt tomato sauce
    1 can of tomato paste
    2 t. oregano flakes
    1 bay leaf (you don't have to crumble it)
    1 t. sugar


Chop basil and mince garlic. Saute both in olive oil in a good sized pot. If you have cast iron, that will add some nutritional iron to the sauce, but I don't know how much.
Put tomatoes, tomato sauce, tomato paste, tvp crumbles, oregano, bay leaf and sugar in the pot. Bring to a boil, then simmer gently for an hour or so.
Tastes great on pasta or spaghetti squash.
