Introduction

You should try this, at least once. It is so so so good! You should try this, at least once. It is so so so good!
Number of Servings: 4

Ingredients

    1 cup quinoa
    2 cups water or stock
    1 can sweet corn
    1 cup kidney beans
    1 recipe guacamole (I used the Weight Watcher Recipe, 6 servings @ 58 cals/serving)

Directions

Cook the quinoa in the water or stock (bring to boil, then turn to low, cover and let cook for 15 minutes) and put in bowl to cool.
Make guacamole, drain corn and beans (rinse beans) and add to the quinoa. Add salt and pepper, garlic, spices, to taste.



Serving Size: 4 servings, approx 1 cup each
