Introduction

Adapting my favorite recipes to be meatless since I'm now a vegetarian! Adapting my favorite recipes to be meatless since I'm now a vegetarian!
Number of Servings: 4

Ingredients

    2 cups - broccoli florets
    1/2 cup - mushrooms, sliced
    1 cup - frozen peas
    1 cup - frozen corn
    1 med - onion

    1 tbsp - soy sauce
    1 tsp - garlic powder
    1 tbsp - cornstarch
    1/4 cup - water

    1 tbsp - olive oil

Directions

On hot skillet place olive oil and all the vegetables until heated through and crisp (4-5 minutes).

On other burner, start up rice.

In separate bowl, mix soy sauce, garlic powder, corn starch and water until smooth than slowly pour over vegetable mixture until glazed.

Serve over 1/2 cup of rice. Rice not included in nutritional information. (Though, if you're using brown rice, it's about 150 added calories.)

Serving Size: Makes 4 one cup servings.
