    2 cups onion, chopped
    2 cups red pepper, chopped
    1/8 teaspoon red pepper flakes
    2 teaspoons cumin
    1 teaspoon dried oregano

    1.5 cups dry brown rice (or 3C cooked)
    3.5 cups water

    3 cups cooked black beans or canned (no salt)
    15 ounce can of tomatoes (no added salt), diced
    2 teaspoons garlic, minced
    2 tablespoons Dr. Grandma’s all-natural, zero-calorie sweetener Delight (or other no calorie sweetener)
    ¼ cup red wine vinegar

    lime wedges to serve


Makes 16 servings, 1/2C each. Each serving is one starch, and about 1/4 veggies.

Sauté the onions, pepper flakes, cumin and oregano and red peppers in spray oil.

Add dry rice, sauté for a minute then add water, cover and simmer 40-50 minutes or until the rice is tender. (If you have cooked rice, add it and 1/2C water and continue with recipe)

Add the remaining ingredients, except limes, and cook for about 10 minutes. Serve with lime wedge.

    At the top of this recipe it says that each serving is 1/2C. I'm actually still cooking this recipe, and I will measure the final product to be sure my servings are right.

    UPDATE - I measured the final recipe and it's 8C total, which makes 16 - 1/2C servings. Hope this helps!
