    1 box whole wheat Rotini (15 oz), uncooked
    2 cups mushrooms, sliced
    1 tbsp Olive Oil
    1 clove Garlic, grated
    1/2 small onion, grated
    1 tbsp whole wheat flour
    1 cup evaporated milk
    6 oz low fat mozzarella cheese, shredded
    6 oz low fat cheddar cheese, shredded


Bring a large pot of water to boil, then add rotini & mushrooms. When it comes back to a boil, warm olive oil in a medium sized sauce pan. Add grated onion & garlic, and gently saute. DO NOT ALLOW TO BROWN!!! Add flour. Whisk. Whisk in milk, a bit at a time. Add cheeses, a bit at a time, stirring constantly.

Drain pasta & mushrooms and pour into a large serving bowl. Add sauce, mixing to coat evenly.

Serves 8.

You could reduce calories by using skim milk instead of evaporated milk.
