    6 tbsp Flax meal
    1 tsp Baking powder
    3/4 tsp Cinnamon
    1 Egg, large
    1 oz Cream cheese, softened
    1/4 c Pumpkin, canned
    1 tsp Stevia
    1/3 c Blueberries
    1 oz Walnuts - chopped


Mix dry ingredients. Combine egg, creamcheese and pumpkin, mix well. Mix egg mixture into dry ingredients, stirring until well mixed. Place mixture into cereal sized bowl. Microwave on high for 3 minutes. Remove from bowl and place on rack to cool.

  • Quickly becoming a staple in my Low Carb lifestyle. I've tweaked it a bit by adding ginger, clove and nutmeg along with the cinnimon, plus a dash of sea salt. I also added 1/2 a scoop of Body Fortress Designer Whey vanilla. This came out perfect! I can only eat 1/2 save the other 1/2 for snack - 5/23/10

  • I just made this and cut it like a layer cake, added whipped cream cheese to the middle and top (like icing), and it was really, really good ! I also added one more packet of sweetener (Stevia instead of Splenda). I thought of saving half for tomorrow . . . that didn't work. :) - 12/4/08
