Introduction

Ingredients

    4 large eggs and 2 egg whites (I use whites from carton)
    1 c low fat cottage cheese
    1/2 c white kidney beans or any white bean
    1/4 c yogurt, low fat, plain
    1 c buckwheat flour
    1/2 c oat bran
    1 T baking powder
    1 T cinnamon
    1 T canola oil
    1 tsp sugar or agave syrup (optional)

Directions

Blend all ingredients in a blender, bake in waffle iron. Resting for a few minutes in a 250 degree oven crisps up waffles nicely. I make a whole batch and freeze the extras for quick homemade nutritious toaster waffles.
