Number of Servings: 16


    For Muffins:

    1/3 cup flour
    1/4 cup butter or margarine, softened
    1 egg, beaten
    1 TBS lemon juice
    2 1/3 cups flour
    4 tsp baking powder
    1/2 teaspoon salt
    1 cup milk
    1 tsp vanilla extract
    1 1/2 cups fresh or frozen blueberries

    Streusel: (in original recipe, this was doubled, but it's just too much for this amount of muffins)

    1/4 cup sugar
    1/6 cup flour
    1/4 tsp cinnamon
    1/8 cup butter or margarine


Cream sugar and butter. Add egg and lemon juice and mix well. Combine flour, baking powder and salt; add to the butter mixture slowly, alternating with the milk. Fold in blueberries.

Grease your muffin tin(s) or line with paper cups. Fill each about 1/2 full.

For streusel, combine all ingredients listed. I just use a fork and cut it all together so it resembles big crumbs. Then sprinkle over tops of muffins.

Bake at 375 for 25-30 minutes.
