Introduction

Ingredients

    3 fresh egg whites
    155 grams sugar
    300 ml of whipping cream
    2 cups of strawberries, halved

Directions

1. Make the meringue. Beat egg whites in a clean bowl (there must be no oil or water, not even a drop!) until stiff peaks form. It should be the consistency of marshmallow fluff. Slowly add 155 grams of sugar as you continue to beat the mixture.
2. Use this "fluff" too make a nest that is 10" in diameter on a baking tray. Be sure to line your baking sheet with waxed paper or parchment paper because the cooked meringue will be delicate and it will stick.
3. Pop this egg-white nest into a low oven (about 150/140 degrees celcius.) As soon as you put the meringue into the oven, turn the oven down by 10 degrees and cook the meringue for one hour. When the hour has ended turn off the oven but leave the meringue in the oven until the oven completely cools.
4. No more than an hour before serving assemble the merignue. To do this fill the nest you have made which is now completely cool with whipped cream (do not add sugar to the whipped cream- the meringue will already be very sweet!) Then top with strawberries.
