Introduction

Muffins great for snack or side item. Very high in fiber. I have also subbed the vanilla flavor for lemon and it gives these muffins a "lemon poppyseed" taste. Muffins great for snack or side item. Ingredients

    6 T butter - melted
    3 large eggs
    ¼ cup whipping cream (or half and half)
    ½ cup Splenda (artificial sweetener)
    2 T vanilla flavoring
    2 t ground cinnamon
    1 t nutmeg
    ½ rounded t baking powder
    ½ rounded t baking soda
    1 cup ground flaxseeds
    ¼ cup chopped walnuts
    ¼ cup Soy Flour- or Atkins Bake Mix, Carbalose Flour

Directions

Beat first 3 ingredients together and then add Splenda and flavoring. In separate bowl mix the rest of the ingredients and add the wet to the dry. Put in 12 cupcake liners or muffin tin sprayed with nonstick spray, and bake @ 375 degrees for 15-20 minutes or until done.
