Ingredients

2 large ripe tomatoes, chopped
2 cloves garlic, minced
4 cups vegetable broth (I used organic, low-sodium)
1 cup plain, nonfat Greek yogurt
1/2 large Haas avocado
pepper to taste
Directions
Saute tomatoes and garlic in olive oil for 3-5 minutes. Add broth, basil and pepper; cover and simmer at medium heat for 15 minutes. Remove from heat and allow to cool for 10 minutes. Add yogurt and avocado; blend with an immersion blender or in 2 small batches in a blender. Return to heat to warm through.
