Introduction

Ingredients

    2 medium sweet potatoes
    1 large red onion
    1 large green bell pepper
    2 T canola oil
    1/4c brown sugar
    salt/pepper (I use no salt)
    garlic powder

Directions

Make a foil pouch by folding a length in half, folding and crease the 2 sides, add 2C of mixed vegies, pour about a tsp of oil (just a smattering) and add sugar and spices. Fold down top opening. Throw on griddle or oven.. or set on a flat rock near the fire. *If a hot fire, double wrap the pouch. Cook until potatoes are soft (10-15min depending on method). Dump and serve or eat right out of the pouch.
