Number of Servings: 16

Ingredients

    Basil, 2 cups
    Olive oil, 1/4 cup
    Pine nuts, 1/4 cup
    Parmesan Cheese, hard, 2oz
    Garlic, 5 cloves
    Salt and pepper to taste
    Water from pasta 1/4 cup (Optional)

Directions

Bring some water to boil to cook a desired amount of pasta later.

Meanwhile, blend ingredients until forms fine light green paste.

After the water comes to a rolling boil, add the pasta and cook as per the instructions. A few minutes before the pasta is done, take 1/4 cup of the pasta water and add to the pesto and blend in. (The starches from the water will help make it creamy while also thinning it out a little bit)

Taste the resulting pesto and add salt and pepper to taste, blending in.

Serving Size: Makes 1 cup (16 tbsp) when using pasta water
