Ingredients

    2 cups ground flax meal
    1/2 cup olive oil
    4 large eggs, beaten
    1/3 cup lemon juice
    1/3 cup Splenda
    1 tsp baking powder

Directions

Blend all ingredients in food processor. Let stand for two minutes, then pour into muffin papers. Bake at 340 for twenty minutes. When done, muffins should brown slightly and bounce back when you lightly press on the tops.
