Introduction

This pasta salad is great for cook outs or pot lucks. Served cold and easy to make. You can add or subtract any vegetables you'd like. It is a very flexible recipe that is healthy! Ingredients

    1/2 cup fat-free Italian dressing
    1 cup chopped mushrooms
    1 cup chopped green bell peppers
    1 cup tomatoes (these can be sun-dried, roasted, cherry, etc.)
    8 oz fat free Feta cheese
    24oz whole wheat farfelle pasta
    Salt (to taste/optional)
    Minced garlic (to taste/optional)
    1 Tbsp vegetable oil
    Water

Directions

1. Cook pasta in water, vegetable oil, salt, and garlic.
2. Drain pasta and place in large bowl.
3. Add vegetables, feta, and Italian dressing. Mix well.
4. Allow to chill in refrigerator for ~1hr.

*Can also be prepared in advance and simply stored in the fridge overnight.
