    1 T coconut oil
    1 c sliced red onions
    2 t Thai red or green curry paste
    1 15 oz can fire roasted diced tomatoes
    1 T lime juice
    2 t brown sugar
    1/2 c coconut milk
    1/4 c fresh chopped basil
    1 T fish sauce
    hot rice (optional)


1. Saute shrimp and onions in oil for 2 minutes. Add thai curry paste. Saute 1 minute.

2. Add tomatoes, lime juice and brown sugar. Boil. Simmer 1 minute. Stir in coconut milk, fish sauce and basil. Simmer until hot.

3. Serve hot over rice.
