    aubergine (diced), olive oil, garam masala powder, some water


fry the aubergine in the oil for a couple of minutes then add the garam masala and fry for 5 minutes. Add a little water to stop it from drying out, put on the lid and cook slowly for at least 45 minutes. Tastes better if cooked ahead of time and reheated

Serving Size: Makes 4 good portions for a side dish
