Ingredients

    1 lb ground beef, 93% lean
    2 tbsp butter
    1 pkg Rice A Roni, beef flavor
    1 can corn with diced peppers
    3/4 cup shredded cheddar cheese
    3/4 cup sour cream, reduced fat

Directions

Lightly brown ground beef; drain grease and set aside.

In a large skillet, sauté rice mix and butter over medium heat until lightly browned.

Stir in 2˝ cups water, seasoning packet, cooked ground beef, and corn. Bring to a boil.

Cover and reduce heat to low. Simmer 15 to 20 minutes or until rice is tender.

Top each serving with shredded cheese (2 tbsp) and light sour cream (2 tbsp).

Makes 6 servings.
