Introduction

Use as a spread on a thick slice of whole wheat breat or my favorite to make a low fat souvlaki on pita.

Ingredients

    2 cups nonfat yogourt (Yogourt Liberte No Fat Probiotic)
    1 large cucumber , peeled
    1/2 tst salt
    Garlic 2 to 4 cloves, minced

Directions

Place yogourt in a yogourt funnel or a strainer lined with a cheese cloth. Place over a bowl and refrigerate; allow to drain for several hours or overnight.

Grate or finely choppe the cucumber. Place in a colander, sprinkle with the salt and allow to drain for 20 minutes. Rinse and drain the cucumber again, if desired.

In a deep bowl, mix a small amount of the yogourt with the garlic. Stir in the remaining yogourt and fold in the cucumbers. Chill.

32 1 tbsp serving.
