    1 large cucumbers - peeled, deseeded and sliced thin
    12 oz grape tomatoes - cut in 1/2
    1 large onion sliced thin
    4 T Red Wine vinegar
    2 tsp granulated sugar
    2 T olive oil
    1/2 tsp black pepper


mix all ingredients together and let marinate in refrigerator for at least 2 hours

Serving Size: makes approximately 8 one half cup servings
