Introduction

Made this with left-over roasted salmon and snow shoe peas from the farm. Made this with left-over roasted salmon and snow shoe peas from the farm.
Number of Servings: 4

Ingredients

    1 cup of uncooked orzo
    8.4 oz of cooked salmon (we used left over roasted)
    Zest of one lemon
    Juice of one lemon
    1 TBSP evoo
    2 cups blanched snow shoe peas, chopped
    2 oz pitted kalamata olives, chopped
    4 oz fat free feta cheese, crumbled
    2 TBSP fresh dill, chopped

Directions

Cook orzo according to package instructions, drain and cool.
Mix all the ingredients together and let it mellow in the refrigerator for at least an hour before serving.

Serving Size: Makes four servings (2 cup is a serving)
