Introduction

I created this recipe because my boyfriend and I are trying to cut carbs and add more veggies to our diet. I created this recipe because my boyfriend and I are trying to cut carbs and add more veggies to our diet.

Ingredients

    2 pounds lean ground beef or turkey
    3 pounds plum tomatoes, chopped
    2 large onions, chopped
    2 bell peppers, chopped
    2 tbsp chili powder
    1 tbsp cumin
    1/2 cup tomato paste
    salt and pepper to taste

Directions

Brown the ground beef in large pot. Add onion and peppers and cook another 5 minutes until soft. Add tomatoes, spices, and tomato paste. Stir well. Bring to a boil then cover and reduce heat. Simmer for at least 30 minutes. The longer the better.

Serving Size: Makes about 12 1 cup servings
