Introduction
Full of protein and fiber this salad is filling and satisfying. I made it on the fly with what I had available, using leftover dressing I made the day before. Ingredients

*French lentils, 1 cup dry
brown rice (1 cup cooked),
Hearts of Palm, 1 cup sliced
*Bell Pepper - Red - 1 large chopped
Cherry Tomatoes- 1/2 cup sliced in half
Cucumber (peeled), 1 large seeded and chopped
Broccoli, 2 cups chopped
Parsley, 1 cup chopped
Olive Oil, 3 tbsp
Limes, 1 fruit juiced
Dijon Mustard, 1 tbsp
garlic, 1 clove minced
*Balsamic Vinegar, 1 tbsp
salt and pepper to taste
Directions
Cook the french lentils (I cook mine in veggie broth). Make sure to use French lentils, they hold their shape and don't get mushy.
Put all veggies in a large bowl, add rice and lentils
Mix olive oil, lime juice, mustard, garlic, vinegar, salt and pepper (I put in container with lid and shake till emulsified). Pour dressing over salad and mix well.
Enjoy!
Serving Size: Makes approximately 6 servings
