Ingredients

    3 C plus 3 T hot tap water
    1.5 T yeast
    3/4 C brown sugar
    1 T salt

    4 C Whole wheat flour
    5 C White flour
    2 T canola oil
    3 T ground flax

Directions

in your kitchen aid mixer put the first 4 ingredients in. let it sit and get really foamy. then add directly to the bowl the remaining ingredients. use your bread hook to mix, only on the first speed. mix thoroughly, until all the dough comes away from the sides of bowl and you have a nice smooth dough.

put the dough on the counter and start kneading. you should be able to knead it without putting extra flour on the counter or loaf. if it's too sticky, just add more flour a tablespoon at a time. knead it for a few minutes, then separate into 3 even hunks. knead each loaf again for a few minutes, shape into a log and place in loaf pan that has been sprayed with PAM. place all loaves in oven with a bowl of boiling water until they rise just above the pan. (YOU ONLY HAVE TO RISE ONCE WITH THIS RECIPE) carefully remove the pans and preheat the oven to 350. once oven is preheated, put the pans back in and bake bread for 30 minutes. you can leave the bowl of water in the oven if you like. cool, slice and ENJOY!
