    4 Cups of Fresh or Frozen Eggplant
    1.5 cups of cooked hbrown rice
    4 tablespoons of Soy sauce
    1 tablespoon of I can't believe it's not butter
    1 tablespoon of White Pepper
    Cooking Spray


Spray the pan with cooking spray. Bring to a Medium Heat.
Add eggplant, butter, and two tablespoons of soy sauce. Let cook down for about 5 mintues.
Add rice and white pepper. let cook for 5 minutes.
Right before you take it off the fire add 2 tablespoons of soy sauce and serve.
