Ingredients

    1 Tbsp olive oil
    1.5 lbs extra lean ground beef
    3 cloves garlic, minced
    2 small onions, chopped
    3 stalks celery, chopped
    1 green bell pepper, chopped
    1 red bell pepper, chopped
    1 yellow bell pepper, chopped
    1/4 cup tomato paste
    1 large can diced tomatoes
    1 can black beans, rinsed and drained
    1 can red kidney beans, rinsed and drained
    1 can sweet yellow corn with liquid
    1/2 tsp salt
    3 Tbsp chili powder
    1 Tbsp cumin
    0.5 Tbsp oregano
    1/2 tsp cayenne pepper
    2 Tbsp molasses

Directions

Heat olive oil in the bottom of a large stock pot or dutch oven. Add onions and garlic and saute for 2-3 minutes till onions start to soften. Add ground beef and cook until just browned. Add celery and peppers and cook another 3-5 minutes. Add spices and tomato paste, stir until well mixed. Add canned tomatoes with liquid, black and red beans and canned corn. Bring to a slow boil, stir in molasses, set heat to low and simmer for 15-20 minutes.

Serve with garlic bread or baked tortilla chips.
