Introduction

A basic recipe you can adapt to your taste (or craving). Play around with different spice combinations. I add to yogurt, smoothies, cottage cheese, or oatmeal and also as a substitute for some of the oil/fat in baking. Keeps really well both in the fridge and freezer. Ingredients

    4 apples*, cored & chopped into 1" pieces (peel if desired)
    Juice of 1 lemon
    1/2 to 1 tsp ground cinnamon
    1/4 tsp ground nutmeg
    1/8 tsp ground cloves or allspice
    pinch coarse salt

    sweetener to taste (splenda, agave, brown sugar, or honey)

    *I like to use as many different varieties as possible to get a good mix of sweet and tart. Tart: Granny Smith, Macintosh. Sweet: Braeburn, gala, Golden Delicious, Fuji.

Directions

1. Toss together chopped apples, lemon juice, spices, and salt in a microwavable bowl. Loosely cover and microwave on high for 4 minutes. Stir, re-cover, and continue to microwave in 1-minute intervals until desired texture is reached (shorter time for firmer chunks, longer for applesauce).

2. Add sweetener of choice to taste and stir into hot compote. Serve hot or let cool and chill.

Serving Size: About eight 1/3 to 1/2 cup servings (depends on size of apple pieces)
