    1 whole wheat tortilla
    1/3 c. lowfat or fat free refried beans
    1/2 c. onions, sliced
    2 Tbsp new mexico green chile, chopped
    1 egg
    1/4 c. egg whites from carton (or the whites from two eggs)
    cooking spray


spread the beans on the tortilla.

spray a skillet with nonstick cooking spray. saute onions 2 minutes. add green chile. whisk egg and egg whites together and pour over the onions and green chile. sprinkle with salt and scramble the eggs.

microwave the tortilla for 30 seconds to warm and spoon egg mixture onto tortilla.

roll up the burrito or eat flat with a fork and knife.
