Ingredients

    1 lb. cucumbers, peeled, seeded and sliced
    1/2 tsp. salt
    1 1/2 cups low-fat plain yogurt
    1 green onion, chopped (aka chives)
    1 garlic clove, minced
    4 1/2 tsp. snipped fresh dill
    Additional chipped green onion and snipped fresh dill for garnish

Directions

Got this recipe out of my Taste of Home magazine.
1. Place cucumbers in a colander over a place; sprinkle with salt and toss. Let stand for 30 minutes. Discard liquid if there is any.
2. Rinse and drain well; pat dry. Plae the cucumber, yogurt, onion and garlic in a food processor; cover and process until smooth. Stir in dill.
3. Serve immediately in chilled bowls. Garnish with additional onion and dill.
