Number of Servings: 12

1 lb dried kidney beans, rinsed
    8 cups water
    4 slices turkey bacon, chopped
    1 onion, chopped
    4 garlic cloves, minced
1 (12oz) bottle root beer (Sugar Free)
1/2 cup barbecue sauce (Sugar Free),
    plus extra seasoning
1/4 cup packed dark brown sugar
    2 Tbs Dijon mustard
1/2 tsp Tabasco sauce or Louisiana Hot Sauce
    1 tsp Salt

Follow package directions to soak beans.

Preheat the oven to 300 degrees F. In a saucepan, over medium heat, cook bacon and onions for 10 minutes or until onions are tender. Stir in garlic and cook for about 15 seconds. Stir in beans and remaining ingredients. Bring to a boil, scraping up any browned bits. Transfer beans to an oven safe dish and cover. Bake until beans are tender, stirring every hour for about 4 hours. Remove the lid and continue to bake, uncovered, until the liquid has thickened to a syrupy consistency, about 1 to 1 1/2 hours.
