This frittata uses fresh spinach and Egg Beaters. Delicious, easy, and fast! This frittata uses fresh spinach and Egg Beaters. Delicious, easy, and fast!
Number of Servings: 1


    1 cup fresh spinach
    1/2 cup egg substitute, liquid (Egg Beaters) (I used Southwestern Style for extra flavor)
    1 oz 2% sharp cheddar cheese
    1 tsp olive oil
    1 dash salt
    1 dash black pepper
    1/4 tsp crushed red pepper flakes
    1 Tbsp sun-ripened dried tomatoes


Preheat broiler. Heat olive oil in cast iron pan (or any oven-safe pan) on low-medium heat on stove top. Chop spinach, saute until slightly wilted. Finely dice tomatoes. Combine spinach and tomatoes with other ingredients. Pour into pan. Cook on low-medium heat until eggs are almost set, for about 3-4 minutes. Place skillet in broiler, about 5-6 inches from the heat, for about 1-2 minutes until top is set. Serve immediately.

  • Tried this recipe with leftover egg whites from another recipe and one whole egg. Didn't have red pepper so added sauteed leek and fresh thyme. Next time will add red pepper and watch cooking time to keep it from being too dry. Tasty! - 11/22/11
