Introduction

I created this recipe to cope with a glut of kohlrabi from our CSA. It turned out tastier than I expected! I created this recipe to cope with a glut of kohlrabi from our CSA. It turned out tastier than I expected!
Number of Servings: 12

Ingredients

    8 cups cubed kohlrabi
    water to cover
    1 medium onion 3 cups chicken stock (or 4 if you have it)
    1 3/4 cups heavy cream
    salt and pepper to taste
    dash nutmeg
    any desired herb or spice to garnish

Directions

Peel and cube Kohlrabi and boil in water to cover until tender. Drain. Add chicken stock and diced onion to large pot. Simmer until onion is tender, then add kohlrabi and enough water to cover. Bring to boil and add cream and nutmeg. Boil briefly to meld flavors, adding salt and pepper to taste. Blend in batches in blender or with stick blender in pot until smooth. Can be served hot or cold like vichyssoise, garnished with herbs of choice, such as dill.

    Oops, looks like I did leave it out! Thanks for pointing that out. I don't seem to be able to correct it right now -- something weird is going on on the website, at least on my computer, which is not allowing me to do much. It was 1 3/4 cup of heavy cream, which is what I had on hand.
